  • 2 tablespoons of olive oil
  • 750 ml of vegetable broth
  • 1 teaspoon of ground cinnamon
  • Salt and pepper to taste
  • Fresh cream (for serving, optional)
  • Pumpkin seeds (for garnish, optional)
Preparation of the recipe

(Français) Preparation of Apples: Peel the apples, remove the cores, and cut them into pieces.

Cooking: In a large saucepan, place the apple pieces, sugar, cinnamon, lemon juice, and water.

Add star anise or vanilla pod if using.

Heat over medium, stirring occasionally, until the apples start to soften (about 10-15 minutes).

Simmering: Reduce the heat and let simmer for 20-30 minutes, until the apples are tender and the compote has a smooth consistency. If you prefer a smoother texture, you can mash the apples with a fork or an immersion blender.

Cooling: Remove from heat and let cool. You can remove the star anise or vanilla pod at this stage.

Serving: Serve the compote warm or cold, as a side to yogurt, pancakes, or as a topping for desserts.
