Chicken Marinade: In a large bowl, mix the ginger, soy sauce, honey, sesame oil, garlic, vinegar, and a bit of salt and pepper.
Add the chicken pieces to the bowl and mix well to coat them in the marinade. Let it marinate in the refrigerator for at least 30 minutes (ideally 1 to 2 hours).
Cooking: In a large pan or wok, heat a bit of oil over medium heat.
Add the onion and bell pepper, and sauté until tender (about 3-4 minutes).
Add the marinated chicken to the pan and cook until fully cooked and golden (about 7-10 minutes).
Finishing: Check the seasoning and adjust with more soy sauce or salt if needed.
If you prefer a thicker sauce, you can add a bit of cornstarch mixed with water at the end and let it simmer until it thickens.
Serving: Serve hot, garnished with sesame seeds and green onions if desired, alongside white rice or noodles.
