  • 600 g beef (shoulder or chuck), cut into cubes
  • 2 star anise
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon rice or wine vinegar
  • 1 cinnamon stick
  • 1 teaspoon grated ginger
  • 2 tablespoons vegetable oil
  • 2 cups beef broth
  • Salt and pepper to taste
  • Fresh coriander for garnish (optional)
Preparation of the recipe

(Français) Sear the beef: Heat the oil in a large pot over medium heat. Add the beef cubes and sear them on all sides for about 5 minutes. Remove and set aside.

Cook the aromatics: In the same pot, sauté the onion, garlic, and ginger until they are soft and fragrant.

Add spices and sauces: Add the star anise, cinnamon stick, soy sauce, brown sugar, and vinegar. Stir everything well.

Cook the beef: Return the beef to the pot and pour in the broth. Bring to a boil, then reduce the heat. Cover and simmer for about 1.5 to 2 hours, until the meat is tender.

Add the carrots: Halfway through cooking, add the sliced carrots. Continue cooking until the vegetables are tender.

Serve: Remove the star anise and cinnamon stick before serving. Garnish with fresh coriander if desired.
